Chole Bhature Recipe: A Flavorful North Indian Dish | Delicious Savory Secrets
- 1 cup dried chickpeas, soaked overnight
- 2 medium-sized onions, finely chopped
- 2 tomatoes, pureed
- 2 tablespoons ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
- 2 cups all-purpose flour
- 1/4 cup semolina
- 1/4 teaspoon baking powder
- 1/2 teaspoon sugar
- 1/2 cup plain yogurt
- 2 tablespoons oil
- Water as needed
- Oil for deep frying
- Drain and rinse the soaked chickpeas. In a pressure cooker, add the chickpeas, salt, and enough water to cover them. Cook for 4-5 whistles or until the chickpeas are tender. Set aside.
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and slit green chilies. Cook for a minute.
- Add tomato puree, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Cook until the oil separates from the masala.
- Add the cooked chickpeas along with their cooking liquid. Simmer for 10-15 minutes, allowing the flavors to meld together. Adjust the consistency by adding water if necessary. Garnish with fresh coriander leaves.
- To make the bhature dough, combine all-purpose flour, semolina, baking powder, sugar, yogurt, and oil in a mixing bowl. Gradually add water and knead into a smooth and elastic dough. Cover and let it rest for 30 minutes.
- Divide the dough into small portions and roll them into round discs, about 1/4 inch thick.
- Heat oil in a deep frying pan. Fry the rolled bhature one at a time until they puff up and turn golden brown on both sides. Drain excess oil on a paper towel.
- Serve the hot and spicy chole with fluffy bhature, garnished with fresh coriander leaves. Accompany with lemon wedges for a tangy touch.
